Halibut and Cannelini Bean Stew
This sumptuous stew is a lot more than a warming comfort food for a cool Fall night. It’s an excellent source of 10 age-defying, disease fighting nutrients including one many people are deficient in — potassium. In fact, a study published in Neurology found that people with the lowest amount of potassium in their diet were 1.5 times more likely to have a stroke than those getting the most.1

Ingredients
1 cup clam juice (8 oz. bottle)
1 cup organic shallots, sliced
3 Tbsp organic extra virgin olive oil
6 cloves organic garlic, chopped
1 1/2 pounds halibut fillets, cut into 1 1/2-inch chunks
1/3 cup dry white wine
4 tbsp organic sun-dried tomatoes, thinly sliced
1 16-oz can organic tomatoes, diced with juice
1 16-oz can organic cannelini beans, drained
1/2 tsp saffron threads
Preparation
Sauté sun-dried tomatoes and shallots in large pot over medium-high heat about 5 minutes. Add olive oil and garlic; stir 1 minute. Add tomatoes with juice, clam juice, wine, and saffron; bring to boil. Reduce heat; simmer 5 minutes. Add beans and fish; bring to simmer. Cover; simmer until fish is just opaque in center, about 5 minutes. Season stew to taste with salt and pepper.
