Raw Cashew Coconut Cookies

Reminiscent of “thumbprint” cookies, these raw treats are packed with omega-3 fatty acids and living-food enzymes for a wholesome, low glycemic dessert.

Ingredients
1/2 cup raw organic cashews
4 Tbsp organic flaxseeds
1 ounce raw organic pumpkin seeds
4 Tbsp raw organic coconut, shredded
1/2 cup organic raisins

Preparation
Place cashews in a glass container, cover with filtered/spring water and cover with a lid. Place in the refrigerator and soak overnight. Drain and rinse. Place cashews, raisins, flaxseeds and pumpkin seeds in a food processor or Magic Bullet (preferred). Grind until the mixture forms a ball. Remove mixture from processor and form into 1-inch balls. Dredge in coconut and flatten to form a cookie. Store in a glass container in the refrigerator.
